Plant-based recipes from the Squishy Face

Craving soda pop but don't want the added chemicals? Step outside the ordinary and try this natural soda.

ingredients

5 stalks rhubarb, sliced into 1/2 inch pieces
1/2 pint strawberries, sliced
1 cup unpasteurized honey
2 Tablespoons lemon rinds
2 tablespoons live culture (such as naturally fermented sauerkraut juice or kombucha)
4 liters water

DIRECTIONS

Makes roughly 1 gallon.

1. In a large pot over medium high heat add 1 liter of water, rhubarb and strawberries. Bring mixture to a boil. Reduce heat and cook for 5 minutes. Remove from heat and allow to cool.

2. Strain the mixture through a nut milk bag into a gallon jar.

3. Add the honey to the jar along with the live culture and lemon peel and the remaining water.

4. Carefully give the jar a little shake.

5. Top with a fermentation air lock and let ferment for 3-4 days in a room temperature environment.

6. Taste test after 3 days and see when it reaches your desired flavor and carbonation level.

7. Place in the fridge to cool. Enjoy.
