Craving Asian food? Sweet & Sour tofu definitely fits the bill. Try it over warm noodles or rice.
1. In a large bowl combine the hot vegetable broth and soy chunks. Let rest 5 minutes. Drain and set aside, reserving liquid.
2. In a large skillet add reserved broth, ginger, onion, garlic and peppers. Sauté 5 minutes.
3. While the vegetables are sautéing combine the ketchup, tamari, hot sauce, maple syrup and rice vinegar in a small bowl.
4. Add the ketchup mixture and the drained, rehydrated soy chunks to the onion mixture and continue to cook on medium high for 10 minutes, until the liquid has reduced slightly.
5. In a small bowl whisk together the miso paste, cornstarch and water.
6. Add the cornstarch mixture to the pot with the vegetables. Stir continually until thick. Remove from heat.
7. Pour over fresh hot rice or noodles and sprinkle with sesame seeds.
