Barley
vegetable
soup

Feeling a little pressed for time? ​A wholesome midweek warmup that's both fast a delicious.

ingredients

10 cups vegetable broth
1 large onion, chopped
1/4 teaspoon paprika
4 carrots, sliced
2 cloves garlic, minced
1-1/2 teaspoons salt
1 teaspoon dried thyme leaves
1/2 teaspoon pepper
1 cup rinsed barley
2 Tablespoons tomato paste
1/2 teaspoon dried basil
1 kohlrabi, peeled and cubed
1 small celeriac, peeled and cubed
2 stalks celery, sliced
1 potato, cubed

DIRECTIONS

Makes approx. 10 servings.

1. Add all the ingredients to an instant pot.
 
2.  Pressure cook for 60 minutes and let it slowly depressurize on its own.

3. Stir and serve. Enjoy!
